30 Day Veggers - the big "1-0"

Still chugging along over here. I made myself a yummy salad last night with sliced avocado on top. :) I wanted to cook up some strips of tofu, but I was having a hard time finding any recipes to simply flavor the tofu. Can you just cut it up and cook it with some soy sauce or something to flavor it??? I'm so clueless as to what to do with it. I do have a book coming on tofu, but I'm afraid the stuff I bought isn't going to survive that long. ;)

Tonight DH will be home, so we are having corn chowder and "Crunchy Veggie Wraps". I need to remember to pick up a cucumber at lunch or else they will be "Non-crunchy Veggie Wraps". I'll let you guys know how that all turns out. ;)

Liann- Im sorry I can be no help with the tofu. I have not had any good experiences with it yet. I am making your potato soup this weekend and I cannot wait.

I almost caved this morning!!!! I came home from the gym to the smell of frying bacon which is one of my favorite foods. You should have seen the guilt on my DH's face...he is usually not home on thursday mornings and did not realize I would be home prior to going to the office.

I told him to eat it before I got out of the shower then went running to the bathroom and took a very long shower to give him plenty of time to eat it!!

That being said has anyone tried any of the non-meat "bacon" products?

Good moring ladies,

last night was my DH (he is active duty!) and my fare well dinner from the U.S. Army Sergeants Major Academy! here in Fort Bliss! I had a veg. meal! It was really good. I don't miss the meat!

Today the wives are giving me a lunch! They all know I don't eat meat!

Teri I tried the non meat bacon, it is not that bad!

Howdy veggers! :)

Liann, you can flavor tofu however you want. It will take on the flavor of whatever you cook it in - think of tofu as a blank canvas. Soy sauce is one option. You could also sautee it with herbs and garlic (yum).

Teri, good job avoiding the bacon! :) I haven't tried of the fakin' bacon products myself (not a big bacon fan), but I hear they're a decent likeness to the real thing.

Belinda, way to go eating veg at the farewell dinner. I hope you enjoy your lunch today - let us know what they serve you. :)

Last night for dinner, I made little english muffin "pizzas". Really easy - I blend some plain yogurt, garlic, fresh basil, and paresan cheese together using a hand blender. Then spread a little bit on 3 split whole grain english muffins (so, it makes 6 little pizzas). Then thinly slice a ripe tomato, and put one slice on each of the 6 pizzas, and top with shredded parmesan. Bake in the oven (I use the toaster oven) at 400 until they're hot and the cheese is melted (just a few minutes). Enjoy! :9 I also find that it helps to toast the english muffins before topping with the yogurt mixture, so they don't get soggy.

Thanks Emily. I'm just going to have to be brave and start experimenting with it. I'm writing down your muffin recipe too. I have everything you mentioned sitting in the fridge at home. ;)

Hey guys!

Emily-I make english muffin pizzas all the time here for the boys! We all love it. I make them so many different ways, the possibilities are endless!

Belinda-your evening and lunch sound great. When, exactly, do you move back to Germany? How are your kids doing so far in school???

Liann-I'm glad you asked the question about tofu. I've never tried it, and I'm actually a bit afraid to! LOL

Teri-I haven't tried the no-meat products yet, other than Boca Burgers. I liked them in the beginning, but after I made my own homemade veggie bean burgers, I just can't choke down a Boca burger anymore!

OK...I'm still going strong. It must be getting to be a habit, cuz this morning I treated the kids to breakfast out.....which we don't ever do, but since we're leaving for camping tomorrow and there's no food in this house, I needed to feed them something, lol. The kids all ordered their dishes with a side of meat of some kind, but I ordered mine with a side of hash browns. It wasn't until I was cutting up DS's pork roll that I realized I didn't even THINK about ordering a meat side.

Camping this weekend will pose a bit of a challenge for me. I'm packing my bean burgers, and my friends and I planned 2 meals that have fish for the main piece instead of meat. I picked up shrimp, mahi mahi and salmon. We'll see how I make out.

If I don't get on here tonight or tomorrow, have a great weekend. We'll be camping from tomorrow thru Monday night. School starts Tuesday!

I just got this book called "Meat Market, Animals, Ethics, & Money" by Erik Marcus. I figured I'd better educate myself on what I am claiming to stand against. I'll give you guys a full book report when I am done with it. :)

Hi all!

I have been so busy that I just realized I didn't check in here yesterday!

I have been feeling really good about making this commitment to vegetarian eating. In general, I am eating even more veggies and fruit and I just feel pretty good!

Yesterday and today I made the most delicious hummis wrap... a whole wheat wrap filled with roasted garlic hummis, broccoli, peppers, mushrooms, cucumbers, onions and sprouts. After I rolled it up I put salsa on top... OMG was it yummy!!!

I am trying to find Tabuli (sp?) salad. I had it the other day with a friend and have been looking for it. I know whole Foods has it but there are none here, only in the city. Anyway, it was so good and I want it!

Sounds like you guys are doing great. Those pizzas sound pretty good! I will have to try that.

Oh, I had to add: where do you guys find tofu? I know this seems like a silly question but I honestly have never looked for it and don't know where in the store to find it. I would like to try cooking with it. I usually go to Shop Rite or Stop N Shop if any of you know those. aAso, there is a health food store I go to but again, where do you think I can find it? Thanks for any info!

Vicki, you can get tofu in your regular grocery store - it is sometimes in the produce department, in the same case as the refrigerated salad dressings and fresh herbs and whatnot. Or it could be in the dairy department, near the milk and cheese. OR, it could be in the health food section, if your grocery store has a separate section for health/natural foods.

My grocery store keeps tofu in the health/natural foods section, with the soy milk and organic milk. They used to keep it in the produce department.

When in doubt, ask the store manager or an employee! :D

Veggie lovers!

I am reading a book called Nona's Italian Kitchen Delicious HomeStyle Vegan Cuisine. it is fascinating. I, like the author, am of Italian decent and really enjoy her take on Italian cooking. It is all abut simplicity, and freshness of the season. The author is Byranna Clark Grogan (married surname)

Clark uses some meat substitutes, but she more often sticks with veggies, grains and legumes (and some soy) and offers soy alternatives for many recipes. For anyone interested in true Italian food with a vegan twist, I highly recommend this book.
