This is probably not technically a marinade, but I like to prep chicken by completely covering the chicken in a low sodium broth with spices for a few hours in the fridge (I usually use peppercorns. paprika, dried onion, dried garlic). I just throw everything together into a Ziploc bag, but you could use Tupperware or Gladware of course.
Then you take the meat out from the broth and bake or grill as you normally would. I don't even add any seasoning since it is already so flavorful and moist from the spiced broth. (I got this idea from a Paleo recipe site.)
