Hey All:
Sorry for the delay in getting this posted, for the people who asked. Major technical difficulties!
Anyhoo, this is from The Tightwad Gazette. I would call it healthy for moderate eaters, as it had butter and some white flour.
WHOLE WHEAT CRACKERS
1 1/2 cups whole wheat flour
1 1/2 cups white flour
1/4 cup sugar (I use turbinado)
1 tsp salt
1/2 cup butter
3/4 cup buttermilk
1/4 cup wheat germ
Sift the first five ingredients. Add butter and process in a food processor. Add buttermilk and process until a ball forms. Set aside 10 minutes. Cut the dough into 4 parts. Grease cookie sheets and sprinkle them with wheat germ. Real out each dough piece on cookie sheet. Sprinkle with salt. Cut into diamond shapes with a pastry wheel (I use a pizza cutter). Bake at 350 for 20-25 minutes. Cool and store.
Few modifications I make: I cut them into squares and I roll out the dough to really, really thin to get that nice Wheat Thin crispness. In fact, if you have a pasta maker, use it for this dough! I actually run the dough through my pasta machine on settings 1,4 and 8 to get it as thin as I want it. I also bake them on the flip side of the cookie sheet, so the rims don't get in the way of the pizza cutter when I'm cutting out the crackers.
