Ricotta Cheese

Hi all,

Does anyone eat part-skim (or fat-free) ricotta cheese for a protein-rich snack, and if so, do you mix it with anything? Looking for some ideas here:)

I did. After I read the book mentioned this forum, I started to eat Ricotta Cheese. My monther in law taught me sicilian way to eat it, which I like it very much. Sprinkle some cinnimon power on it. Sometimes, I added Equal to get some sweet taste. I sometimes add grapes when they were sweet.

I put 1 teaspoon of either vanilla or almond extract and one pack of splenda in 1/2 cup of ricotta cheese and cut up a couple of almonds and sprinkle them on. It's a South Beach Diet desert.

I've always thought Ricotta Cheese was strictly for pastas: lasagna, etc.

I didn't know you can eat it as a desert. So you put the cheese in a bowl or something, add the ingredients and eat it as is? For some reason this sounds nasty. I know I should try it before I knock it. Sorry. Maybe I will give it a try and let you know....eeeewwww!

I recently tried a recipe from Cooking Light - super easy. Basically, a touch of lemon or orange zest and some honey is added to the ricotta. Then top with some macerated berries with a touch of chopped mint. The quantities of each can sort of be adjusted to taste. Delicious!!
 
Yeah, I put it in the bowl and then put it in the freezer for a few minutes. I know, I never would have thought of it as desert either until I saw it in the South Beach book. It's actually pretty good, IMO anyway. : )
