Quinoa...Difference in Colors?

Hi All:

Does anyone know if there is a difference between the regular white/yellow quinoa and the red? I am making quinoa muffins tomorrow and have only ever made them with the white, but all I have in the house is red.

TIA!

I believe there is no difference in taste. the only difference is in the color.

It shouldn't make any difference, and they should be interchangeable in recipes. It may make a difference in the appearance of the final dish, but not in the taste.

There may be a slight nutritional difference (I suspect the red may have a bit higher antioxidant content, but maybe not), and perhaps a very slight difference in taste (the red being a little bit nuttier, from what I recall), but it's so mild you'd only notice it if you ate the quinoa plain, in a side-by-side comparison.

I'd go ahead and use the red for the muffins (which will turn out a bit different color than if you'd used the white).

I don't remember where, but I saw a recipe on a blog awhile back where the poster used red quinoa instead of the white called for in her muffin recipe and, aside from the color (they were darker), the taste was apparently the same.
