Healthy food options on a road trip?

I'm going on a road trip vacation next week and want to minimize the restaurant/drive thru intake. If you had to spend many hours in a car what would you pack?
 
Normal food! We stop at a supermarket, grab bread, cheese, carrot sticks, tomatoes, yoghurts, fruit and we are off. One of us drives, the other makes sandwiches, or you stop for 5 mins and put a sandwich together and drive on.

No drive thru junk required.

we usually try to stop at a grocery store too. For packing, I'd suggest a set of plastic forks/spoons/knives, paper plates and a can opener!
 
Peanut butter is my best friend on the road. (I also like almond butter and sunflower seed butter.) I put it on bread or rice cakes or crackers, eat it with cut up veggies, or smear it on an apple or banana.

Obviously, in addition to PB, I have to bring bread/rice cakes/crackers, tupperware of sliced veggies (carrot sticks, celery, and also whole baby peppers are great), and apples or bananas, also like oranges.

I also like the disposable containers of protein shakes (like Muscle Milk) or the Horizon Organic milk disposable containers.

Pirate's Booty is a favorite for road trip munchies, or a homemade snack mix (with Pirate's Booty, craisins, nuts, etc).

As a PP said, make sure you have all the utensils, etc., that you need (plus a few empty sacks for holding trash).

I live in Indonesia and fly around SE Asia quite a bit, where healthy (and safe) food selections can be very limited. So I've learned to always bring nutritious, filling dishes that travel well. These are our favourites; there are lots of recipes online if you're interested.

Heidi Swanson's Carnival cookies - vegan chocolate chip oatmeal cookies that are made with bananas, popcorn, almond flour, and coconut oil. So yummy, filling, and no sugar rush!

Spanakopita - I make a whole wheat crust with red wine and olive oil, then fill it with loads of sauteed greens, mint, and some feta cheese.

Roasted chickpeas - just cook chickpeas (garbanzo beans), coat with spice mix of choice then roast in the oven.

I also tend to try to pack normal food if I'm going to be on the road for a while. We used to do a lot more road trips and camping, so I had gotten good at figuring out what works.

If you have a cooler, you can pack just about anything! You can bring sandwich fixings and prep them en route, or make the sandwiches in advance, depending on the length of your trip. I also bring apples and/or oranges, almonds, and pasta or bean salads...if you are ok with stopping somewhere to eat, the last two can work really well. Hummus and pita is a nice portable snack too.

If I'm going to eat breakfast on the road and we leave really early, I make breakfast sandwiches with ww english muffins, veggie or turkey sausage and an egg, and wrap them in foil for eating later. They travel beautifully and keep you full for a long time, and only have about 300 calories.

If you get yourself a good penknife (Swiss Army Knife, all ladies need one!), you will always
have with you, and never need to pack separately, a sharp knife (actually, several of different sizes), a can opener, a bottle opener, etc, etc.

Keep it in the glove compartment!
