Healthy Cookbooks recommended??

I am looking for a cookbook that's has fairly easy healthy recipes with serving and calorie info for each recipe. I need some good vegetarian recipes as well even though I'm not a vegetarian...just trying to get away from all the chicken and meat I usually eat. Any suggestions?

I haven't tried any of the recipes yet, but I would suggest Marilu Henner's Healthy Kitchen Cookbook. She is vegetarian and very informative - I got this book for about $4.00 an Amazon in the seller's section.

I think Vegan Planet is a favourite around here, even among the non-veggies. It has some pretty great recipes in it.
 
I really like Molly Katzen's Moosewood Classics, it's got vegetarian and some vegan recipes. Everything I've ever tried, which is alot, is delicious!!

If you're looking for even easier/quicker recipes, she co-wrote a health book with starter recipes with Dr. Walter Willet called Eat, Drink and Weigh Less. There aren't a ton of recipes, there are some very good vegetarian-friendly go-to recipes.

Cooking Light cookbooks are great. They give full breakdowns on recipes, offer vegan options, and have everything from basics (every meal) to entertaining to ethic options, etc. You can get them (annual editions) at major booksellers or from CookingLight.com.
I have a bunch of them and use them all the time.
 
You may not be into Weight Watchers, but all the WW cookbooks have awesome recipes, many vegan options, and all have the calorie/fat/protein, etc information included.
