Hardboiled eggs

OK - does anyone know a trick to make sure your hard-boiled eggs don't crack during cooking? I can't stand when the egg boils outside of the shell! I place them so gently in the water too. I don't get it.
 
Put your eggs gently into your pot, then add cool water, boil for about 12 minutes. I usually do about 5 at a time, in a small pot. After cooking, I'll rinse with cold water. The only time my eggs have cracked if I overcooked them. Hmmm, boiling eggs, who knew it could be difficult?? hahahaaa

I always put the eggs in cold water also, then bring to a boil, take them off the heat and let them sit in a covered pot for about 21 minutes.

I also add a little salt to the water - I heard that it helps keep the eggs from cracking, but I don't know if that's true or not.

OK - so maybe it's because I boil them too long. I put them in when the water is cold and cook them for about 20 minutes. I hate when the yolk isn't really hard. I do put salt in the water, but that's because it makes them peel easier. If you leave the salt out, the egg tends to stick to the shell.

I've started adding the egg whites to my salads to get my protein intake up. Duke gets the yolks. He's a happy dog - even though I chase him with the vacuum. :)

I'm like you in the sense that I put them in cold water and cook them for 10-15 minutes. The trick that works for me, though, is putting a bit of vinegar in the water before cooking them. I haven't had a cracked egg yet, and the taste is not affected by the vinegar.

Hi Donna-

Put salt in the water and also use a bigger pot and put more water in it. When the eggs are boiling, the "jiggle" of the bubbles can cause the eggs to collide with one another and also hit the sides of the pot, causing the cracking. If the pot is bigger , than you should alleviate that problem.

I don't know if you have one - but I have a steamer that came with little slots for the eggs to sit. They just sit over the steam for about 18 minutes and become hard boiled!! Is steaming them an option for you? If you have a strainer that you could put over some boiling water and cover it with a top it should work the same. They are not bouncing around in bubbly boiling water or floating so they NEVER crack! And they're just as good!
 
Rolling boil, not hard, and use a glass pot (I read that somewhere) with plenty of room.

Love those eggs.
 
I put them in cold water, turn on the heat, when it comes to a boil, I turn it off, and by the time the water cools down again, they're perfect.
