Ok I am going to admit I am NOT a vegitable eater, I will eat them though but I am getting tired of eating them the plain old way and I was looking to see how you all eat your veggies and how you cook them and what veggies are your favorites

A large pot of steamed baby carrots, cauliflower, beansprouts and brocoli, topped off by (you're gonna think I'm nuts) salsa, ketchup and President's Choice "Memories of Santa Fe". Kinda like spaghetti without the noodles. Been eating this pretty well every night for 8 years and I still love it!

I also love steamed mushrooms with some soy sauce.

My favorite vegetables vary depending on what's in season - there are a lot of locally grown spring greens making their way to the co-op lately that are wonderful.

I like to eat most veggies raw, though that doesn't work with everything. My preferred methods of cooking are roasting or grilling - that dry heat draws the sweetness out of everything and the end results need little, if any, embellishments for serving, i.e. salt, butter, etc.

Grilled or stir fried with a little sesame or olive oil. Very little. And maybe some seasonings like garlic and herb by Tones or anyone else. As long as it's not full of salt.

Ditto! Just a bit of olive oil and either grilled (even on George Forman grill) or sauteed.

On someone else's plate, LOL!! Sorry but I dislike veggies too, and just have to force myself to eat them. Soo sorry no help from me!!:+ :+ :7

I like raw vegEtables in salads (often bean salads), steamed veggies as a side dish, veggies sautéd in cooking sherry instead of oil (gives a similar mouth feel to oil sautéing, but with no fat, though I sometimes add a bit of oil as well) with added tofu or seitan (high protein wheat gluten), or microzapped (yams take only about 6 minutes in the micro). I also like soups with lots of veggies in. Raw red peppers are also good when I'm looking for a somewhat sweet, crunchy snack.

I love most vegetables raw. I love to snack on green beans, peppers, celery and cucumbers. My oldest daughter (9), absolutely loves raw vegetables so I always have some cut up. She is such a healthy eater. She has really helped to keep me a healthy eater as well. Now my other daughter, well that's another story.

I could drink Balsamic straight out of the bottle!! I love it, and will put it on anything, which following the direction of this thread is on vegetables 9 times out of 10. Just thinking about it makes me want to wander to the kitchen:)

I love all types of vegetables. I like them grilled with fresh garlic and olive oil. I cook a lot of mixtures and stir a small amount of lowfat salad dressing into them. I like to fix zucchini with some pasta sauce and sprinkle it with parmesan cheese or lowfat mozzarella. Sometimes I stir fry them up with shrimp or chicken. I also like to cook up different varieties and fold them up into an omelet.

As a vegetarian, I have most of my vegetables as part of the main dish, so they are included and I don't have to think about "how to include them". Try it: invest in a very high quality vegetarian cookery book and start making three or four of the main meals for the week vegetarian ones with beans and pulses added rather than meat for protein and you'll never have to worry about it again! I make vegetarian lasagna, leek and lentil stew (with loads of carrots, red peppers and mushrooms in it), lentil, pepper and carrot soup with garlic and bean burritos with peppers and zuchinni, cauliflower cheese, on a regular basis. I add side dish of collards and tomatoes as salad all the time.

I hate vegetables but I actually like steamed mixed vegetables with flaxseed oil and a little ground flax. I think this is delicious and i actually have cravings for it sometimes.

I can't eat raw veggies, they give me a horrible stomachache. My favorite way to get veggies is in soup. I love trying diffrent soup recipes. I also like roasted or grilled veggies.

Love 'em all!! Any way at all - raw, sauteed, with dip, breaded and fried, etc., etc., etc.!!
