Butternut Squash

Since we're talking about sweet potatoes, I remembered that I bought some butternut squash last week and have no clue how to cook them. Obviously you put them in the oven, but what temp and for how long? Also, what do you put on them?

Last time I made it I cut it in 1/2, scooped out the seeds and put it fleshy side down in a few inches of water in a casserole dish. Baked it at 350 but I can't remember for how long. I'd check it in 30 min - poke it with a fork/knife and you'll know when it is done. I sprayed mine with I Can't Believe It's Not Butter Spray and sprinkled a bit of brown sugar on it. Very tasty!

Butternut squash is my favorite veggie! They cook up very nicely and quickly in the microwave. Cut them in half, take out the pulp and seeds, and place them in a glass casserole dish. Put about an inch or so of water in the bottom and cover with plastic wrap. Nuke on MEDIUM for 6- 12 minutes, until you can easily put a fork through it. Voila!

I prefer to eat it with a little bit of olive oil margarine and a tiny bit of splenda. Delicious!

Oooh...I love butternut squash. Now I have to buy some this weekend.

I split it in half, scoop out the seeds and place it in a pie dish and then roast it in the oven. Then I let it cool, peel the skin off and mash it with a little salt, lots of pepper and some butter....yummy!
