Advice....need some low-carb and EASY

meal plans. :D I have a fairly busy schedule & I'm not a very good cook so I need SIMPLE ideas. I generally eat an egg & 2 whites, yogurt, and some fruit for breakfast, but I've hit a plateau & I think I need to shake up my eating routine. I'm bored with my choices in food and need some EASY ideas!! Please bring 'em on!! :9
 
Well, yogurt really isn't low carb. But if you like it stick with it.

You sound like me--short on time & a lousy cook. :) I do make up some things in advance, or I'll buy stuff at the prepared foods section at the local gourmet market.

You can make up hard boiled eggs & turkey bacon/sausage in advance. That's usually what I eat for breakfast on the run. For lunch I'll often eat a big chef's salad or antipasto or something of the sort, but if you don't want to eat out an option is to cut up a whole bunch of stuff on Sunday or something & store it in ziplocs or containers. You can get really creative w/this, like olives, different kinds of meats & cheeses, veggies, etc. Then keep a giant container of shredded lettuce & you can make up your own salad pretty fast.

Also occasionally I'll make up some kind of tuna salad or chicken salad. You can also add stuff into this like bacon, diced tomatoes & onions. Pretty tasty.

For dinner the George Foreman grill has been a lifesaver. You can get them on ebay pretty cheap. And don't get the single size, get the family size--you can barely grill a hot dog on the small ones.

Anyway, on the George I grill steaks, pork chops, chicken--you name it. Sometimes w/just a little meat tenderizer, onion powder & oregano, sometimes I'll slap it in a container w/some marinade the night before. And don't think I make my own marinade--the grocery store has a huge selection of them in the salad dressing section. For a side you can eat pretty much any veggies except corn I think.

Snacks are cheeses, olives (I found these really delicious feta-stuffed olives), pepperoni, celery & cream cheese/peanut butter, almost any kind of nuts (pistachios are my current favorite), and I've been on this huge edimame (sp?) kick lately. Lots of protein in that stuff--usually you can find it in the froze section w/the sugar snap peas. Those things are addicting.
