30 Day Veggers & friends - Day 3

Good morning ladies! Breakfast this morning was some Raisen nut bran (not sure of the exact "brand") with soy milk and then some nasty coffee at work. I really need to start stopping at Starbucks or Dunkin Donuts, cuz' the coffee here doesn't even deserve to be called coffee. For lunch I have a salad and some yogurt and I also brought some cottage cheese and peaches (in water not syrup) for a mid afternoon snack. Not sure about dinner yet, but I'll figure that one out later.

I ordered a bunch of cook books from Amazon yesterday and cannot wait to get them! Tomorrow will be my first night having dinner with my DH (he has been working his second job all week) so I have to come up with something good to make. If anyone has any suggestions for a good veggie meal that even meat eaters like, please share!

Yesterday I survived my first day without meat! My veg. stir fry was so good! I added back beans! Yummy! Not sure what I will cook for dinner!

Liann, I'm LOL that you NEED to start going to Starbucks! :7 Yup, we all NEED a $8 a day caffeine addiction. ;) Seriously though, I love Starbucks - Tall Soy Cinnamon Dolce Latte, No Whip - yummmm :9. And soon, it will be time for the Pumpkin Spice Lattes... double yummmmm :9

Let's see... for breakfast I had Kashi Go Lean Crunch with soy milk, and a banana. For lunch, I'll have leftover ravioli with peppers and tomatoes, baby carrots, and a peach. For snacks I have some plain yogurt with granola, and a plum. And for dinner, I'm not sure yet. It may be a tomato soup and grilled cheese night. :)

Angel Hair with Sun-dried Tomatoes and Goat Cheese

1 (10-ounce) jar sun-dried tomatoes packed in oil, chopped (oil reserved)
1 small onion, chopped
4 garlic cloves, minced
1/4 cup tomato paste
2/3 cup dry white wine
8 ounces angel hair pasta
Salt and freshly ground black pepper
2 ounces soft fresh goat cheese, coarsely crumbled
2 tablespoons chopped fresh Italian parsley leaves

Heat 2 tablespoons of the oil from the sun-dried tomatoes in a heavy large skillet over medium heat. Add the onion and saute until tender, about 3 minutes. Stir in the garlic and saute until fragrant, about 1 minute. Add the tomato paste and cook for 2 minutes, stirring constantly. Add the wine and sun-dried tomatoes and simmer until the liquid reduces by half, about 2 minutes.
Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, stirring occasionally, about 5 minutes. Drain, reserving 1/2 cup of cooking liquid. Add the pasta to the tomato mixture and toss to coat, adding some reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper. Sprinkle with the goat cheese and parsley and stir. Mound the pasta into bowls and serve.

BELINDA IS HERE! YAY!!!!! Hi, Belinda! Glad to have you checking in with me (us) on another place!

I had a NIGHTMARE last night. I remember dreaming that I went to the school lunch with my kids and ate a big ol' tray full of turkey and gravy! YUCK! I woke up, hoping it was really a dream! LOL

Yesterday turned out just fine. I ended up having friends for dinner. I made a large pot of spaghetti, a pot of sauce with turkey meatballs (for my kids and my friends) and I roasted a large tray of garden tomatoes. I tossed my spaghetti with the tomatoes and it was just YUMMY!!!!!!!!

Today should be fine also. I just had my Kashi with soy milk. I've got leftover roasted toms, and I'll be making a pot of some kind of vegetarian soup (I'll share whatever recipe I make).

Happy to see everyone is making out so well. My dinner out last night went much better than expected. I had wild mushroom ravioli which was yummy.

My friends were very supportive and one even reminded me to ask the waiter if the sauce for ravioli had any meat stock in it. I would not have thought to ask that. I have a lot to learn!!

Today I had oatmeal and a peach for breakfast. I will be having a Bocca "vegan" Burger on a whole wheat bun for lunch. Im not sure what I will be having for dinner yet.

The receipe with angel hair pasta and goat cheese looks reallt good

Emily - Hmmm...Pumpkin Spice Latte! Now you are getting me in the mood for fall! I think I'll go home and start decorating for Halloween ;).

Hi Teri! We must have been posting at the same time. I'm getting really hungry reading about your ravioli dinner!!! Keep an eye on veggie soups too. A lot of them are made with beef or chicken broth. I've been able to find ones that are not, but you really have to read the ingredients. ;)

So far I am feeling really good with what I have been eating. It's probably in my head, but I just feel much "cleaner" inside. ;)
 
Hello!

I hope it's okay if I join in. I have been red meat free for about 6 years now, but occasionally eat some turkey and chicken. Well, now that is going to end. This is a great way to get started. I will be eating fish however. I see that some of you do as well. I also will continue to eat eggs and some dairy. I hope to eventually wean my way to cutting back on those things as well.

So far today I had oatmeal with PB and protein powder. For lunch I plan to have a big salad and a veggie burger. Snacks will most likely be some fruit and cottage cheese. also a protein shake after I teach cardio/sculpt this evening.

BTW, I love Gardenburger brand veggie burgers!! OMG, they are so tasty and have some really good varieties.

Tonight I will have some eggplant parm. ( baked with some FF mozzarella, crushed tomatoes and paremsian with spices. I just sprinkle a bit of bread crumbs over each layer to keep it light.) and stir fry veggies.

So glad for this check in!

I had yogurt w/wherm germ mixed in this morning, and a muffin. I just ordered the Moosewood Classics and Cafe Flora cookbooks from Amazon. (yea) I'm so excited because tonight's dinner is Pan-Seared Tofu with Braised Spinach and Pears (from Tyler Florence). DELICIOUS!!!
(cooking light also has several fantastic recent recipes with tofu - new faves for sure! check their website)

Last night was leftover spagetti.

The angel hair w/sundried's and goat cheese sounds good. I do something similar and even easier. While the pasta boils, chop up the sundrieds. Drain, toss with sundrieds, a drizzle of the oil from the jar, crumbled goat cheese, some arugula (or your favorite green), salt and pepper to taste. That's easy. Super fast, easy and delicious!
 
Hello!

Right now I'm sitting here eating jalepeno hummus with carrots and bread -- same thing I had for dinner last night. Delicious! Luckily I don't need that much variety in my food. I can't imagine what I would do if I had to eat something different at each meal. Leftovers rock!

For breakfast I had my usual peanut butter and honey toast with soymilk chai latte. I found a really good chai tea bag. I love the liquid chai, but it seems like there is a lot of sugar in it and the way I go thru it, it becomes quite expensive. My late afternoon/pre workout snack will be a salad with sundried tomatoes and walnuts and a balsamic vinagrette dressing. It will be the first time I've had it without the blue cheese. I hope I still love it. Dinner/post workout meal will probably be a blueberry, banana and soymilk smoothie.

I ordered a number of vegan cookbooks from the library, including Vegan Planet. I'll let you know how they are once I've reviewed them.

A good dinner idea for a nonvegetarian (ie my DF) is something cheese laden, such as spinach lasagne...
 
Just had my Bocca burger for lunch and it was very tasty. Michele the tofu dish sound absolutly yummy. Did you find it on the food network website?

I just got a call from my brother and I felt like it was an intervention. He wanted to know what crazy thing I was doing now??
Keep in mind that while they are not overweight I am the only person in my family that works out and trys to eat healthy. I feel that they were very comfortable with my role as the "overweight but great person" role I played in the family. ( I still need to lose quite a bit of weight to be happy) I felt that they were just adjusting to my choice of living a healthy lifestyle and to quote my brother "now this craziness". Why can't they just be happy for me?

Sorry for the rant but I needed to get that out
 
Awe, I'm so sorry Teri! It's too bad that people feel our choice to try to be healthy is "craziness". I've gotten this from my family too about the exercise. They just cannot understand why in the world anyone would "want" to exercise. And like I said before, just wait until my sisters hear about this!!! I am the baby (there are actually 9 years between me and the youngest of the older three) and everything I do is crazy to them... Stick to your guns and feel free to rant to us all you want. I'm sure I will be doing the same shortly! ;) Just wait until they see me slap a veggie dog on the grill on Labor Day! lol...
 
I am with you guys about people's reactions. For me, they already drive me crazy about not eating meat and only eating mostly fish. I get all the comments like " pork is the new white meat" and "red meat is necessary for iron" blah, blah, blah! Then, when I don't eat white flour foods and opt not to have foods with sugar, you would think I am personally offending them!!

What really burns me up personally is that I lost alot of weight and in the last 6 years have managed to completely change my life and maintain my loss. I am healthier than ever. You would think that after being a severe diabetic, having high blood pressure, high cholesterol and kidney problems, ( which BTW, are all now either gone or under control) they would understand why I would do everything in my power to continue to stay on track. Anyway, now that I am also not going to eat chicken or turkey I can imagine the comments. Tough tooties to them!!

My DH is actually supportive of my choices, although he wouldn't ever eat some of the things I do, but my boys are a whole other story. They are cheeseburger crazed junkies. I will have to brain wash them somehow. Hey Gayle, how about your boys, do they eat meat? What will you do? Will you try to change their eating habits??

My husband is also very supportive in my choices regarding living a healthy lifestyle. I just feel my family does not understand me or they are intimitaded by my choices.
 
Well, I just got a woman here at work to join me! And she's ordering the new DVDs, too! We're starting our own food/workout checkin to keep each other motivated, as well! Spread the word!
(The Tofu recipe is in his first cookbook - not sure if it's on the Food Network website; it may be, as I believe he did make it on one of his shows)
 
Michele that great that you have someone at work to support you and help you with your eating and working out.

I could not find the Tofu recipe on line would you mind sharing it?

To each his own, right? Too bad more people don't udnerstand what that cliche means. Who cares what they think, right?

Vicki...I'm with you on what you said about people seeing where you came from, but then still thinking you're not doing the 'right' thing.

As for my kids...they eat really well when it comes to meat. Older DS eats veggies but no fruit, and vice versa for younger DS. I guess I could feed them cereal and grilled cheese until they 'convert', right? LOL I haven't yet decided excactly what to do with them. Like somebody else said yesterday, all along now, I've just been making 1 dinner and simply subbing something for myself for the main meat item. Hasn't been a big deal!
