All three work quads, glutes. inner and outer thighs and hamstrings to various degrees, with more emphasis on quads than on hamstrings. Pliés also work the adductors (inner thighs) a bit more. I'd add deadlifts and/or step ups to work the hamstrings/glutes a bit more.
