I have a hard time getting enough veggies in and this really fills me up:
1 can low sodium chicken or veggie broth
1 medium potato, peeled & cut into large chunks
1 stalk celery, dices
1 small onion, chopped
1-2 handfuls of frozen broccoli florets
1-2 handfuls of fresh spinach
minced garlic to taste
black pepper to taste
ground red pepper to taste
dash of salt
You can toss in any other veggies or seasoning that you like.
Throw it all in a pan & cook until veggies are tender; potato chunks soft but not mushy.
Sometimes I'll use a hand blender & "cream" the soup by adding a bit of skim milk. Sometimes I just eat it unblended. Also good is to add chunks of cooked chicken or turkey kielbasa after the vegetables are cooked. I'll usually top a bowl of the creamed version with 1T sour lean and 1T shredded cheddar (the added flavor is worth a tidge of fat).
