I like to incorporate as many fresh veggies that I can into my diet. (Even though I am recovering from a week long pig-out!)

I like to make egg white omelets with fresh chopped veggies for breakfast or salads for lunch, but would like to have them on hand all week. Any tips on keeping them fresh? How long will a chopped bell pepper last? I am pretty good when it comes to cooking, but I usually use the whole thing, and don't store a lot of chopped produce. I would like to do this though for convenience.

Also, do you keep cooked chicken breast on hand for lunches and stuff? I am thinking of cooking a couple extra breasts when I cook dinner and using them for lunches.

I rotate either chicken breast, turkey breast or lean pork loins. I've cooked them in the crockpot, oven, george formen or braised them in liquid. Also, I think they probably last about 4 days cooked. Turkey breast at the deli is good too and lean baked ham. A lot of them are only 0-2 grams fat per ounce. All of them are good on a slice of whole wheat bread for your carbs then I add some fruit on the side.

I am not a veggie person, so I have to make myself eat them every day. Green peppers last a long time.

Now, I am on to 100% pasteurized egg whites. I mix half cup with half cup skim milk in a bowl of whole grain cereal. Also, I mix 3/4 cup with cup of oj. That is a really quick snack.

I have been barbequing on the grill lately. When we have the leftover barbeque chicken, I chop it up in chunks and throw it into my salad with hardboiled eggs too. Yummy and Nutritious.

Yes, I need to start thinking of leftovers so I can have some nice protein that I don't have to cook for lunch. Usually it's tuna or hardboiled egg, but I would like to have some shrimp or chiken on hand sometimes that is already cooked. I just chopped up some bell pepper and mushrooms for the week. I bought a container of green onions that were already chopped up in the produce section-yes a little pricier, but already to go. I noticed my grocery store has tons of prechopped stuff now. They even have green beans that are washed and you microwave them in the bag. I love fresh green beans, but I don't know if I can pay 3.99 for a nights worth. :)

Melissa, I am wondering about your egg whites. Are they in powdered form?

Charlotte, I can't believe we still don't have a grill. I love to grill out, and especially love the taste of grilled food. Dh and I need to go shopping for one this week. We have a great back porch and the weather is great to eat outside.

I like your idea of chopping up your veggies and putting them in containers, etc. I need to start doing that too to save me more time.
We just bought a new grill from Wal Mart. I think for just over $100, not bad. It is all we really need for us.

Egg Whites

They are liquid. They are sold in little cartons by the regular eggs. I was a little nervous at first about using them. I called the company and they stated that the eggs are as safe as drinking milk. You don't taste them at all. A delicious drink is 4 oz cranberry juice, 4 oz oj and 3/4 egg whites. Melissa
